Ingredients:

25 oz zucchini, diced

10 oz sweet potatoes

½ large onion, chopped

1 garlic clove, minced

1 bay leaf

2 ounces tomato sauce

1 tablespoon olives, pitted

1 tablespoon cilantro, chopped

½ cup of water

2 teaspoon chili powder

Salt and pepper, to taste

How to Prepare:

Marinate the zucchini in the salt, pepper and chili powder for at least few hours unrefrigerated at room temperature or place in the fridge overnight. Set the Instant Pot to sauté mode and add in the zucchini. Cook it until lightly browned. Add in all the remaining ingredients and mix well. Close the lid and cook on a MEDIUM pressure for 40 minutes. Then portion the zucchini into two plates. Serve it with the salad and brown rice.
