Ingredients:

10 carrots, peeled and chopped

1 cup of raisins

1 cup of apricots, chopped

2 tablespoons tomato sauce

1 tablespoon apple cider vinegar

½ cup of applesauce

1 cup of water

2 garlic cloves, minced

1 small onion, peeled and chopped

1 tablespoon Olive oil

1 teaspoon chili pepper powder

salt and pepper to taste

chives, chopped

How to Prepare:

Wash and soak the raisins in the warm water for 10 minutes.
Spoon the olive oil into your Instant Pot and set it to the sauté mode and let it heat up, add in the onion and garlic and sauté for 5-10 minutes until clear and caramelized. Add all the remaining ingredients and mix well.
Close the lid and cook on a HIGH pressure for about 10 minutes. Quick-release the pressure.
Portion the carrots into two bowls or mugs and dollop each bowl with the chopped chives and serve with the white wine.
